In the heart of Salario, I Butteri is the go-to spot for true meat lovers in the Capital. The restaurant was born from the Cardarelli family's passion for Tuscan cuisine and for chianina beef, strictly raised in Italy. On the table, fiorentine, filetti and tagliate of beef triumph in various forms, alongside filetto al pepe verde, arrosticini di pecora and salsiccia del boscaiolo. The house specialty is the glorious buttera, to be enjoyed with baked potatoes and beans. Among the starters, you'll find rich crostini maremmani and traditional soups such as ribollita. The first courses, made with fresh pasta, range from pappardelle al cinghiale to fettuccine ai funghi porcini e tartufo, to ravioli alla buttera, not to mention the great classics of Roman cuisine such as amatriciana, carbonara and cacio e pepe. Completing the offer are pizze napoletane, prepared with a naturally leavened dough that rises for 24 hours.
Press play and hear about I Butteri straight from Edoardo Cardarelli.
