The restaurant was born from the idea of Nicoletta and Cristina, two women devoted to old-fashioned cooking, made of long cooking times and simple yet never obvious dishes, capable of respecting the raw ingredients. The ingredients are sourced locally, often from small producers, and the menus change with the seasons: the day's specials are described to guests verbally. The kitchen pays tribute to various Italian regions, with particular attention to Roma and the south, from Napoli to Sicilia, before meeting the Emilian tradition of Cristina, the chef, in the fresh pasta and stuffed pasta, strictly handmade. The bread, desserts, preserves, and gelato are also the product of the same handmade work done in the kitchen. The wine list features about 150 Italian labels, alongside a small selection of foreign wines designed to surprise regular customers.
