A separate chapter is deserved by our cellar, carved into the Monte dei Cocci, also known as Monte Testaccio: a historic site dating back to imperial times, formed by the shards of amphorae once used to transport oil and wine, broken and piled up here once emptied. The walls of shards surrounding the cellar ensure constant temperature and humidity, ideal conditions for the preservation and aging of wines.
